Off the Grill

Hands's Pasta

Ingredients:

Pasta - (Your Choice)
Stuffed Green Olives sliced
Sun Dryed Tomatoes
Olive Oil
Garlic - Sliced or smashed depending on your preference
Wine (Sherry or Marsala works just fine)
Salt

Optional:
Mushrooms
Bacon
Chopped Parsley
Parmesan Cheese

Instructions:

Chop the Sun Dryed Tomatoes and soak them in the Wine. Set aside.

Cook the Pasta according to package directions. Drain well when finished. Transfer pasta to a large bowl.

Heat a large fry pan or wok on high heat. If you're includng bacon, fry it in the pan at this time. When done remove the bacon and pour off the bacon fat. (Don't bother to wipe out the pan, the leftover fat adds flavor!)

Add enough Olive oil to coat the bottom of the pan. Fry the Green Olives in the oil. (Note: The longer you cook them the saltier they get!)

Add enough Olive oil to coat the pasta liberally, and turn heat down to medium. If your including mushrooms, add them at this time. Add the Garlic, cooking until soft. Be careful not to burn the garlic!

Turn the heat up just a touch then add the Sun Dried Tomato & Wine mixture. Cook over medium/high heat till the alcohol in the wine evaporates.

Pour the mixture over the pasta, add parsley, salt, and cheese to taste. Toss the pasta until it's completely covered with the oil mix.
