Murdock's Seafood Bisque
Ingredients:
1 ½ cups milk
3 cups cream
1 10 ¾ oz. Can of tomato soup
1 cup butter
1 onion - Medium size
1 1lb. Lobster - thawed and diced
½ lb. Shrimp - each cut in half
1 lb. Blue crab meat ($18 per lb.) or Imitation crab
6 ½ oz. Can of minced clams
1 ½ cubs four cheese Mexican style fine shredded cheese
3 medium sized potatoes - peeled and diced small
Double dash of dried chopped chives
Double dash of crushed red pepper
Double dash of basil
Salt and pepper to taste
1 - 2 tomatoes for garnish
Instructions:
Seafood - Heat ½ cup butter in saucepan. When hot add seafood. Add 1tsp salt,
1tsp pepper and a splash of oil. Sauté until cooked through, then remove from
heat. Don't over cook. (If using blue crab, do not cook it in this step. Add it
at the very end, just before serving.)
Onion - In a saucepan, sauté onion. Lightly salt & pepper and add a
splash of oil. Cook until lightly brown then remove from heat to be added
to bisque later.
Bisque - In a deep pan add milk, cream, tomato soup, ½ cup butter, potatoes, cooked
onion, chives, red pepper and basil. Bring to a boil then add onion and simmer until
potato is tender.
When potato is almost done, mix in seafood (drain first) including blue crab, and cheese.
Bisque is done when potato is cooked through and cheese is melted.
Add shredded cheese and diced tomato for garnish.
